Sweet potato bruschettas with tomato sauce

For 4 servings

Ingredients
2 large sweet potatoes
4 tbsps. Tomato Paste KYKNOS
350 gr. yellow grated cheese (gouda, cheddar, mozzarella, etc.)
Some cherry tomatoes in slices
Some dry oregano or thyme
Fresh thyme or parsley
Olive oil
Salt & Pepper

Preparation
Wash well and cut the sweet potatoes into thin slices. Grease a baking tray or sheet metal that you have drizzled with oil. Spread the sweet potato slices on top. Season with salt and pepper and sprinkle with some oil.
Dissolve the Tomato Paste KYKNOS in some lukewarm water and season with pepper and oregano or thyme. Spread the paste on the sweet potatoes.
Sprinkle with the grated cheese and bake in a preheated oven for about 15 minutes, until the potatoes are soft and the cheese is melted.
Serve with sliced tomatoes and fresh thyme or parsley.
