Lamb stewed in mustard with honey and tomatopaste

For 4 persons

1 lamb leg (cut into slices)
4 tbsp. olive oil
6 tbsp. Mustard with Honey KYKNOS
3 tbsp. Tomato Paste KYKNOS
6 fresh onions (chopped coarsely)
5-6 springs of fresh thyme
50ml chicken stock
Freshly ground pepper

Place a large non-stick pan on high heat to heat well and add the olive oil.
Sear the pieces of lamb leg so that it gets a good color on all sides, sprinkling salt and freshly ground pepper.
Place the pieces of lamb in a large bowl and add the chicken stock, Mustard with Honey KYKNOS, Tomato Paste KYKNOS, freshly ground pepper and mix very well.
On a cutting board finely chop the fresh onions with a sharp knife. Place 2 pieces of lamb with some of the fresh onions and some fresh thyme on parchment paper, close the parchment paper like an envelope and use kitchen twine to tie it. Repeat the process with the remaining pieces of lamb.
Place all the envelopes in a non-stick pan along with ½ cup of water, cover well with aluminum foil and bake in a preheated oven at 170°C for 1 hour and 45 minutes, checking during the time if liquid is needed.
