Breadsticks with Tomatopaste

Servings: 40 - 45 breadsticks


Ingredients
500-520 gr. soft flour
80 gr. Tomatopaste KYKNOS
120 ml seed oil
160 ml white wine
30 gr. powdered sugar
50 gr. Butter (at room temperature)
130 gr. gruyere (grated)
20 gr. baking powder
½ tsp. baking soda
30 gr. sesame
1 tsp. salt
Freshly ground pepper

Preparation
Put the seed oil, wine, sugar, salt and soda in the mixing bowl. Beat with the wire for 2-3 minutes and add the butter, sesame & plenty of freshly ground pepper and continue to mix the ingredients for another 2-3 minutes. Change the mixer attachment and put on the hook.

Pour Tomatopaste KYKNOS into the bucket and as soon as it is combined with the rest of the ingredients, start pouring the flour. After pouring in about half, add the baking powder and continue pouring in the flour until it forms a smooth, soft dough. Stop the mixer and let the dough rest for 10 minutes.

Preheat the oven to 180°C on the resistances. Line 2 baking sheets with non-stick paper.

Form thin breadsticks, 10-12 gr. each, and transfer them to the sheet pan. Bake the breadsticks for 12 minutes. Let them cool on a wire rack.
