Pork spare ribs with BBQ glaze

Ingredients

2kg of pork spare ribs chopped

For glazing:
200g BBQ Sauce KYKNOS
20g grape molasses
½ onion
2 tbsp. of olive oil
100g Orange juice
1 tsp. sweet paprika
1 spoonful of butter
Salt
Freshly ground pepper

Preparation

On a cutting board with a sharp knife finely chop the onion.

Place a small saucepan over medium heat to heat well and add the olive oil. Sauté the chopped onion until golden, stirring constantly to prevent it from browning. Add the sweet paprika, continue sauteing for another 1 minute and add the orange juice, grape molasses, and BBQ Sauce KYKNOS and mix well.

Let the mixture come to a boil, lower the heat and let it simmer until it thickens enough, stirring at regular intervals. When the BBQ glaze is ready, remove it from the heat, add the butter and stir until it melts and is incorporated into the glaze.

Place a grill pan over high heat to heat up well and sear the spare ribs well on all sides, sprinkling with salt and freshly ground pepper.

Remove the spare ribs from the grill, pass them through the BBQ glaze and place them in a shallow pan, lined with non-stick paper, and bake in a preheated oven, at 200 degrees C, up and down resistances, for 20-22 minutes, passing the spare ribs with the BBQ glaze every 5-6 minutes, with the help of a brush.

To grill on the BBQ, sprinkle the spare ribs with salt and freshly ground pepper, place them on the BBQ, grill until nicely browned and continue grilling, basting the spare ribs with the BBQ glaze very often until they form a rich layer of glaze.

Serve the spare ribs on a plate in the center of the table accompanied by homemade chips.
