4 tomatoes
4 eggplants
4 green peppers
3 potatoes (cut into long narrow pieces)
30 ml olive oil

For the filling:
300g clove rice
2 tbsp. of olive oil
1 onion
1 leek
2 cloves of garlic
4 spring onions
1 carrot
1 Florina pepper

½ bunch parsley (finely chopped)
350g [Crushed Tomatoes]{https://kyknoscanning.com/en/26-trimmenes-tomates.html} **KYKNOS
500 ml vegetable stock
100g roasted pine nuts
100g black currants
20g sugar

Freshly ground pepper
Preparation
On a cutting board, finely chop with a sharp knife the onion together with the leek, green onions, garlic and parsley, the Florina pepper into small cubes and grate the carrot on the thick part of a grater.
Remove the flesh from the vegetables and keep the flesh from the tomatoes in one bowl and the flesh from the 2 eggplants in another. Sprinkle the vegetables with salt and freshly ground pepper and sprinkle sugar on the tomatoes.
For the filling, place a deep non-stick pan on a medium heat to heat up well and add the olive oil. Sauté the onion with the garlic, leek, carrot and the flesh of the 2 eggplants, stirring until they begin to wilt. Add the rest of the vegetables, the green onions and the
Florina pepper, continuing to saute for another 2-3 minutes.
Add the [Tomato Paste]{https://kyknoscanning.com/en/1-tomatopoltos-diplis-sympyknosis-28-30.html} KYKNOS together with the flesh from the tomatoes, the [Crushed Tomatoes]{https://kyknoscanning.com/en/26-trimmenes-tomates.html} KYKNOS, sugar, raisins and pine nuts and mix well. Add the clove rice, sprinkle with salt and freshly ground pepper, mix well, extinguish with the vegetable broth, lower the heat and continue cooking for another 5-6 minutes.
Remove the mixture from the heat and fill the vegetables with it, add the potatoes to the pan, pour over the [Crushed Tomatoes]{https://kyknoscanning.com/en/26-trimmenes-tomates.html} KYKNOS and olive oil, salt and freshly ground pepper and bake in a preheated oven at 170-180°C for 70-75 minutes.
