Giants Beans Spetsofai (with Sausages and Peppers)

Soaking time: 12 hours

Preparation time: 15΄- 20΄

Cooking time: 1 ½ approximately

For 5-6 servings

500g Giant beans
2 country sausages (in slices)
1 green pepper (in large frames or sticks)
1-2 carrots (in slices)
1-2 dried onions (coarsely chopped)
500g Milled Tomatoes KYKNOS
1-2 tbsps. Tomato Paste KYKNOS
A little fresh rosemary (optional)
Salt, freshly ground pepper
Olive oil

Soak the beans in plenty of lukewarm water overnight. The next day, drain them and boil them for about 40 minutes, until they are softened but not melted.

Meanwhile, in a non-stick pan with a little olive oil, sauté the sausages and set aside. In another pan, heat a little oil and sauté the onions and garlic. Add the carrots and pepper and mix. Let them soften and add the Milled Tomatoes KYKNOS, Tomato Paste KYKNOS and season. Simmer the sauce for a few minutes until slightly set.

Drain the beans and throw them in a casserole. Add the sausages and pour over the sauce and a little olive oil. Cover and bake in a preheated oven for about 35-40 minutes.
Uncover the food and cook for another 15 minutes, leaving it with its oil.

Serve with feta cheese and freshly kneaded bread.
