Giant Beans with milled tomatoes

For 4-6 servings

500g giant beans
A pinch of salt
70g olive oil
1 onion (finely chopped)
2 carrots (finely chopped)
2 cloves garlic
500g Milled Tomatoes KYKNOS
1 tsp. cinnamon
2 bay leaves
300g water
1 tsp. freshly ground pepper, black
1 tsp. salt

For serving:
Parsley (finely chopped)
Feta cheese
Freshly ground pepper

In a large bowl, soak the beans with a little salt for half a day. Rinse and place in a pot with water. Boil for 1 hour until softened. Strain and set aside.
Add olive oil to the pot together with the onion, garlic and carrots and sauté for 4-6 minutes. Add the Milled Tomatoes KYKNOS together with the cinnamon and the bay leaf and mix. Add water and season with salt and pepper. Simmer for 15 minutes.
Place the giant beans to a baking sheet and bake in a preheated oven at 180o for 1 hour, until softened.
Serve with chopped parsley, crushed feta cheese and fresh pepper.
The cooking time of the legumes varies depending on how fresh they are.
