Greek tomato scrambled eggs

Ingredients
1 tbsp. olive oil
1 tbsp. Tomatopaste 28% KYKNOS
4 egg whites
1 egg
150 ml of water
Salt
Pepper
Oregano

Preparation
Put the olive oil and the Tomatopaste 28% KYKNOS in a pan and saute on medium to high heat for about 1,5'.

Then add the water and mix well until a sauce is created and leave on medium heat to start simmering. Add the whites and the egg, stirring constantly. Season with salt and pepper and add the oregano.

Leave on medium heat until it completely absorbs the liquid.

Serve on toasted bread with turkey and anthotyro.
