Garden Peas Puree and mushrooms with thyme

A light and healthy recipe, that can easily become a vegetarian dish, while keeping all its flavours. The vivid colours of the vegetable and the intoxicating scents of the herbs compose a mouthwatering result, a feast for your eyes and your mouth. Enjoy!

Ingredients for four persons

For the garden peas puree

For the mushrooms

  • 8 large white mushrooms
  • 2 garlic cloves finely chopped or crushed
  • 100ml chicken stock (or vegetable stock if you cooking a vegetarian meal)
  • 2 tablespoons of olive oil
  • 4-5 thyme leaves
  • 2 tablespoons of olive oil

For serving

  • Juice from 2 lemons
  • Salt and pepper

Preparation
Melt the butter in a saucepan and add the onion for a minute. Add the peas, stir in the stock and the rest of the ingredients. Cook over low heat for 10 minutes, then remove and let the mix cool down. Using the hand blender mash in a thick puree.

Put the mushrooms along with the rest of the ingredients in a bowl and mix them thoroughly using your hands. Place a pan on the heat and wait until very hot. Add the mushroom mix in the pan and cook for 10 minutes. Then, remove from the lit and add the lemon juice.

Tasty Tip
If you want you can serve it as a side dish along with roast meat, burger or a salad.
