Wraps with grilled vegetables and avocado

Preparation time: 10΄-15΄

Cooking time: 20΄- 25΄

For 4 persons


4 medium or large tortillas
4 tbsp. Mayo Sauce Vegan KYKNOS or more
1 red pepper
1 green pepper
1 zucchini
½ eggplant
1 avocado (in sticks)
2 spring onions (sliced)
½ bunch parsley (finely chopped)
Some red cabbage (optional)
A little fresh thyme or oregano
A little paprika, sweet or hot
Salt, freshly ground pepper
A little olive oil


Clean and cut all the vegetables into strips. Spread parchment paper on a sheet and place the vegetable sticks on it. Sprinkle with paprika and thyme or oregano, season with salt and pepper and sprinkle with a little olive oil. Bake them in a well preheated oven for about 20-25 minutes or until they are soft and golden.

In the meantime, spread the tortillas on the kitchen counter and spread plenty of Mayo Sauce Vegan KYKNOS. Divide the baked vegetables among the tortillas, the avocado, the chopped onions and the cabbage. Sprinkle with the chopped parsley and roll the tortillas. For convenience, wrap them in non-stick paper.
