Eggs in Tomato Sauce

Cooking time: 15’- 20’
For 2-3 servings

Ingredients
4-6 eggs
500g Milled Tomatoes KYKNOS
2 cloves garlic (melted)
150-200g feta cheese (grated)
Fresh basil (finely chopped)
Salt, freshly ground pepper
A little paprika (sweet)
Chili flakes (optional)
Olive oil

Preparation
Heat a little olive oil in a deep-frying pan and sauté the garlic, add the Milled Tomatoes KYKNOS, season and let it simmer until thickened. Break the eggs into the pan over the sauce. Salt and cover the pan.
Cook for a few minutes to set the yolk and the egg white. Sprinkle with feta cheese and remove from the heat. Garnish with fresh basil and serve immediately with the pan. If you want, you may add chili flakes.
