Bao buns with pork

Cooking time: 1 hour

For 8-10 pieces

8-10 buns for bao
500g pork knuckle or other cut of your choice (cooked)
2 carrots (grated)
1 Chinese cabbage (finely chopped)
Ketchup KYKNOS

For the pork
1 onion (finely chopped)
2 cloves garlic (melted)
2 tbsp. brown sugar
50ml red wine
2-3 tbsp. rice vinegar
2-3 tbsp. olive oil
2-3 tbsp. sesame oil
1 tbsp. Tomato Paste KYKNOS
200g Ketchup KYKNOS
Salt, freshly ground pepper


Heat olive oil in a deep pan and sauté the onion and garlic. Add the sugar and stir until it melts. Deglaze with wine and vinegar. Finally, add Tomato Paste KYKNOS and Ketchup KYKNOS and season. Add the pork in the sauce and stir to get it all over. Pour over the sesame oil and transfer the pork to a baking tray. Bake in a well preheated oven for 50-55 minutes, until the meat is caramelized. For the first half an hour, cover the pan with aluminum foil. Steam the buns, according to the instructions on their package. Shred off the meat. Fill the buns with meat, carrot and cabbage and drizzle with extra Ketchup KYKNOS. Serve immediately.


• If desired, you may replace the pork with beef or other meat of our choice.
• For a crunchier taste, you may sprinkle the bao buns with roasted sesame when serving.
