Turkey meatloaf with sweet and sour tomato sauce

Baking time: 1 hour and 30 minutes

For 4-6 servings

Ingredients
1 turkey breast fillet (opened for roll)
12 - 14 slices of bacon
2 tbsps. Tomato Paste KYKNOS
2 tbsps. Dijon type mustard
2 tbsps. butter
2 cloves garlic
Gruyere on sticks
Dried plums
Chestnuts (boiled)
4-5 sprigs of fresh thyme
A little sweet paprika
A little ginger (powder)
Salt, freshly ground pepper

For the sauce
2-3 tsps. of Tomato Paste KYKNOS
400 gr Milled Tomatoes KYKNOS
1 large onion (coarsely chopped)
1 green or red pepper (bobbed)
1-2 sprigs of celery (cut)
1 carrot (slices)
Some raisins blonde (optional)
A few chestnuts (boiled)
½ cup of brown sugar
½ glass of white wine vinegar
Various spices (cinnamon, allspice, nutmeg)
Olive oil
1-2 tbsps. butter
Salt, freshly ground pepper

Preparation
Heat the butter and add the garlic, thyme, mustard and tomato paste KYKNOS. Stir to homogenize.
Season the meat on all sides. Spread the butter mixture on one side. Place the cheese, plums, chestnuts and thyme. Wrap it in a roll. Place the slices of bacon, half of them next to each other and the rest crosswise. Put the roll on one end and wrap the bacon around it. Finally, wrap it tightly in foil. Bake in a preheated oven for about an hour and a half.
Remove the foil and transfer the roll to a plate. If you want, serve with potatoes, carrots, sweet potatoes, chestnuts and so on. In a separate bowl, serve the sweet and sour sauce.
For the sauce: sauté the onion in oil, over low heat, stirring constantly, until melted. Add the pepper and the carrot and as soon as they soften, add the Tomato Paste KYKNOS, stir for a few minutes and deglaze with the vinegar. Pour the Milled Tomatoes KYKNOS and season. Let the sauce simmer until it stays with the oil. Towards the end add the sugar, raisins, chestnuts and butter.

Tips
Use paste for more intensity in the taste and to balance the taste of the mustard.
For a more spicy and fine taste you may replace the bacon with prosciutto.
The same recipe can be made with chicken and pork. The sweet and sour sauce can accompany almost all recipes with grilled meats and vegetables.
