Linguine with Olives and Feta Cheese

For 4 servings

500g linguine pasta (or another)
500g Milled Tomatoes KYKNOS
1 onion (finely chopped)
2 cloves garlic (melted)
½ bunch of parsley (finely chopped)
1 tsp. black olives (seedless)
300g feta cheese (coarsely grated)
Some fresh basil or parsley leaves
Salt, freshly ground pepper
Extra virgin olive oil

Heat a little olive oil in a deep-frying pan and fry the onion and garlic. Add the Milled Tomatoes KYKNOS and season with salt and pepper. Simmer until the sauce sets well. Towards the end you may add the parsley and the olives.

At the same time, cook the pasta in plenty of salted water, following the instructions on the package. Drain and pour into the pan with the sauce, along with 1 soup spoon of boiling water. Stir and wait a few minutes for the sauce liquids to be absorbed.

Serve with grated feta cheese and fresh basil. If you want, add freshly ground pepper.
