Ingredients
1 potato
1 eggplant
1 carrot
1 zucchini
1 red pepper
1 green pepper
1 onion
2 cloves of garlic
300 gr. Crushed Tomatoes ΚΥΚΝΟS
150 gr. Passata ΚΥΚΝΟS
2 tbsp. Tomatopaste ΚΥΚΝΟS
100 gr. olive oil
1 tbsp. oregano
Salt, Freshly ground pepper
Preparation
Preheat the oven to 180°.
Cut our vegetables and put them in a pan with a little oil.
Put the Tomatopaste ΚΥΚΝΟS, the Crushed Tomatoes ΚΥΚΝΟS, the Passata ΚΥΚΝΟS, olive oil, salt, pepper and oregano in a bowl and mix.
Chop the garlic or pass in through a garlic press and add it to the bowl with the tomato.
Pour over and mix well.
Cover our pan with aluminum foil and bake for about 40-45’ in the air.
Remove the aluminum foil and bake for another 20΄.
Ideally served with a slice of feta.
