Green mixed salad with shrimps

For 2 persons

200g mixed green salad
4 tbsp. olive oil
Juice of ½ lemon
8 shrimps (cleaned) No 2
1 cucumber
80g corn
1 fresh onion (chopped)
10 cherry tomatoes
2 tbsp. mint (chopped)
150g Mayonnaise Light KYKNOS
Freshly ground pepper

On a cutting board with a sharp knife cut the cucumber in half and then into slices, the cherry tomatoes into slices and finely chop the fresh onion.

Place a pot of salted water over high heat and boil the shrimp for 1-2 minutes.

In a bowl, place the shrimps, cut into slices, together with the cucumber, corn, fresh onion and cherry tomatoes along with the mint, Mayonnaise Light KYKNOS, salt and freshly ground pepper and mix well.

Pour the lemon juice and olive oil over the mixed green salad, sprinkle with salt and freshly ground pepper and mix well and carefully.

Serve the mixed green salad in deep, individual bowls with the shrimp, vegetables and Mayonnaise Light KYKNOS on top.
