Spicy lentils with sausage

Ingredients
350 gr. lentils
Water
Salt
3 country sausages
70 ml. olive oil
1 dry white onion
2 cloves of garlic
1 hot pepper horn
1 tbsp. Tomatopaste KYKNOS
350 gr. Crushed Tomatoes KYKNOS
80 ml. tsipouro
100 ml. water
2 tbsp. fresh thyme
Salt, Freshly ground pepper
Smoked paprika

Preparation

Put salted water in a pot to boil. We throw in our lentils that we have rinsed well and let them boil for 8-10 minutes. Strain them and rinse them with warm water.

While our lentils are boiling, chop the onion, the garlic, cut the hot pepper into rings, removing the seeds.

Add olive oil to a pan and let it heat up on medium to high heat.

Cut our sausages diagonally into pieces. Add them to the pan and saute them well. Bring them and leave them on a plate with absorbent paper. We try to drain them well before taking them out of the pan because we need the oil along with the fat left by the sausages.

After they have been removed, add the onion, garlic and pepper and saute well for about 3-4 minutes. Add the Tomatopaste KYKNOS and cook for another 1 minute.

Add the tsipouro and cook until the alcohol evaporates.

Add the Crushed Tomatoes KYKNOS and the water and let it boil.

Then return the sausages to our pan, lower the heat and let them boil for about 5 minutes. Add the lentils and mix well. Simmer for about 5-7 minutes until our sauce thickens.

Serve and enjoy with toasted country bread.
