Greek spinach rice with tomato (Spanakorizo)

For 4 servings

Ingredients 1 kg spinach (cleaned and coarsely chopped)
250 gr. glutinous rice
1 tbsp Tomato Paste ΚΥΚΝΟS
500g Milled Tomatoes KYKNOS
1 onion (grated or finely chopped)
3-4 spring onions (finely chopped)
1-2 cloves garlic (optional)
½ bunch of dill (finely chopped)
Salt, freshly ground pepper
Olive oil
Lemon juice for serving

Preparation
Heat a small amount of olive oil in a pot and sauté the onion, spring onions and garlic, if necessary. Add the Tomato Paste KYKNOS and season with salt and pepper. Then add the rice and the Milled Tomatoes KYKNOS. Stir and add the spinach to the pot. Let the food simmer, having the pot sealed with its lid, for about 20-25 minutes. Add the dill to the food, a few minutes before removing it from the heat.
Serve the food lukewarm with extra dill, a little fresh olive oil and lemon juice.

Tip
Lemon juice blends harmoniously with the tomato sauce and enhances its taste.
