Tomatoes with eggs and small pies

A meal that brings us flavours and aromas from our childhood. Delicious eggs with tomato and Sygklino along with pies.

It may seem a variation of our own Kayana but you will be surprised, this particular dish has a highly Mediterranean origin and is called Shakshuka and is usually eaten as breakfast. See the recipe and enjoy which time of day you want. 

Ingredients
For 4 people

2 tortilla pies
cut into small pieces
6 tablespoons crushed KYKNOS tomatoes
1 small onion, finely chopped
150g figs, cut into small cubes
8 eggs
6 tablespoons olive oil
1 sprig thyme salt and pepper

** Preparation** In a large and deep frying pan, add the olive oil along with the onion to polish for 1 minute. Then add the fig, thyme and stir for 1 minute. Add the tortilla pies and continue stirring frequently, lowering the heat in half. As soon as they start to turn golden, add the tomato and add the eggs. Season with salt and pepper, cover with a lid and leave for another 5 minutes. Serve while it's still warm.
