Tomato soup with macaroni

For 6 servings

Ingredients
500g macaroni
1 onion (finely chopped)
2 cloves chopped garlic (optional)
1-2 carrots (in slices)
1 red or green pepper (diced)
370g Chopped Tomatoes KYKNOS
500g Passata KYKNOS (slightly concentrated tomato juice)
1 ½ lt of hot water or vegetable broth
½ bunch of fresh parsley (finely chopped)
Olive oil
Salt, freshly ground pepper

Preparation
Heat a little olive oil in a wide pot and sauté the onion and then the garlic (if you decide to put) and pepper. Add the chopped tomatoes KYKNOS and the passata KYKNOS as well, season and let them cook for about 12-15 minutes. Then add hot water or vegetable broth to the food and let it boil. Add the pasta, stir and cook for as long as their packaging says. Remove from the heat and sprinkle with chopped parsley or other herbs.

Tips
• You may add any vegetable you want: mushrooms, peas, broccoli, cauliflower and so on.
• Also, depending on whether you want your soup to be thicker or juicy, you may increase or decrease the amount of water or broth.
