Trahanoto with feta cheese and basil

For 4 servings

Ingredients
350g trahana pasta sour or sweet
1 onion (finely chopped)
1-2 cloves garlic (melted)
1 glass of white dry wine
500g Chopped Tomatoes KYKNOS
1lt hot water or vegetable broth
A little paprika and turmeric (powder)
Chili flakes
Salt, freshly ground pepper
Olive oil

For serving
Finely Chopped fresh basil
8-10 tomatoes (cut)
100-150g feta cheese (grated)

Preparation
Heat a little olive oil in a deep pan and sauté the onion and garlic. Deglaze with wine and let it evaporate for 2-3 minutes. Add the Chopped Tomatoes KYKNOS and season. Add the trahana, stir and wait for it to absorb the most liquids.
Add water or the broth gradually, stirring constantly, until the trahana is cooked and the food boils.
Remove from the heat and add the tomatoes, feta cheese and basil to the pan. Serve immediately, while it is still hot.

Tips
You may replace the feta with other white cheese such as cream cheese, manouri and so on.
If you want a spicier result, you may add chili flakes to the serving.
If you use sour trahana you can add a little sugar to the food, along with the sauce.
